I have to brag on my yummy creation dinner and share the super easy recipe with you!
It was so easy, so quick and um only 250 Calories! Heck yes!
Sesame Ginger Stir Fry with Cauliflower Rice
I totally adore frozen veggies!
I also totally adore these lawrey marinades
And I am totally addicted to adding crushed red pepper to everything! ha
First I cook dice up the chicken and brown it in a skillet in the marinade!
Once it is almost done I add the veggies and a little more marinade and cover and cook till veggies are all done!
While the chicken was cooking I took the frozen cauliflower and put it in a bowl, covered it with water and popped in microwave for 6 mins until completely soft then put it through the food processor. I didnt add anything to it because i knew it was gonna be topped with yummy goodness!
Once it was all done I put the cauliflower 'rice' in bowl and topped with yummyness! We loved it! My hubs seriously chowed down!!
And oh it was so yummy! Did I mention it was healthy and took less than 20 mins to make!?!
Yay for a day of eating well!
